Spaghetti Squash Au Gratin

Yesterday was such a relaxing day! I was so productive on Saturday that I got to just chill out for most of the day on Sunday. I also got to play around a bit in the kitchen! You're welcome ;)

It amazes me how, sometimes, just a few little changes are all you need to take a very unhealthy item and up the nutrition. Now would I consider this a healthy meal? Um.... yes and no. I'll explain later, for now lets get to the good stuff!

I have to confess my love of potatoes! I could eat them at every meal in one form or another. But they are among the list of things I have chosen to cut back on. It's not that white potatoes are really bad for you, (they are kind of high on the carb side but also have a lot of nutritional benefits that get overlooked) they just get a bad rap because of all of their endless, unhealthy possibilities.

With that in mind, does covering spaghetti squash in sour cream and cheese make it healthy? Well, not really. but it is still an upgrade in the health department from doing the same to white potatoes. So without further ado, I give you, Spaghetti Squash Au Gratin!

What you will need:
1 Spaghetti Squash
2 T butter
1 Cup Sour Cream
3/4 Cup Cheddar Cheese
1/2 of a large onion chopped and sauteed (optional)
garlic power or chopped garlic.
Red pepper flakes
Black pepper

 I cooked my spaghetti squash in the microwave. Super fast and much easier. Just stab some holes in it, microwave it for 12 minutes, turning it halfway through. Then slice it in half, remove the seeds and scrap the flesh out with a fork. Easy Peasey.

Mix all the ingredients together reserving 1/4 cup of cheese. Place mixture in a greased 13x9 pan. Cover with remaining cheese and cook at 375* for about 20-25 min.

I actually think I like this version better than Potatoes Au Gratin! The spaghetti squash has a bit of a sweet flavor to it. It also doesn't get mushy like potatoes do if you cook them too long. I give it two thumbs up! 

We served it up with some Italian Turkey Meatloaf. If you have never made a meatloaf out of ground turkey before, I highly recommend it! There is hardly any grease at all! I make mine with spaghetti sauce instead of ketchup for a bit healthier and tastier dish.



So yummy.


Over all I would have to say that this particular combination was a bit too heavy for my preference. I would love the Au Gratin with some baked chicken or the meatloaf with some steamed veggies. But both on the same plate were a bit too much for me.


Not for Nathan though! He went back for seconds! So this meal is also husband approved!!

  1. Hey have you thought about changing the sour cream to Greek yogurt? This sounds delicious and I'm thinking of trying it out, but with greek yogurt instead!

    1. I did think about it but I was afraid Nathan wouldn't eat it. He is not a fan of Greek Yogurt! But if you try it please let me know! If you can't notice a difference I may try to sneak that in next time!

  2. Spaghetti squash has so many great uses! My favorite is spaghetti swuash pasta:)
