Santa Fe Turkey Stuffed Bell Peppers

Bet you can't guess what was on sale this week!! Peppers? Yep. You got it!!

I found peppers for 33 cents a piece! Can't pass that up! They have been about 90 cents a piece at best here lately.

This recipe is a super simple one! I made a double batch, minus the rice and saved half for another night.

Santa Fe Turkey Stuffed Bell Peppers



What you will need (for a double batch)


3 Green or Red Bell Peppers
2 lbs Ground Turkey
2 cans Rotel
1 can Corn (Drained)
2 cans of Black Beans (Drained and Rinsed)
1/2 Large Onion (chopped)
3/4 cup Rice (dry)
1 T Olive Oil
Shredded cheese (as much as you like!)

Spices: To Taste
Chili Powder
Cumin
Garlic Powder
Onion Powder
Paprika
Black Pepper

Optional:
Guacamole
Sour Cream


I didn't take very many pictures of the cooking process but this is a pretty simple recipe so I'm sure you will have no trouble with it.

Preheat Oven to 350*

Begin cooking it first according to packet instructions.

Heat your olive oil. Caramelize the onions over med heat. Add spices and the Turkey and brown it over Med-high heat. (use lots of chili powder and cumin!). Add Rotel, Corn, and Black Beans. Heat through. Add Rice to HALF of the mixture. (Save other half for Santa Fe Taco Soup!!)

Cut Peppers in half and remove seeds. Place in a foil lined pan. Put a small amount of shredded cheese in the bottom of each pepper half. Spoon in Turkey Mixture. Cover with shredded cheese and bake for 10 - 15 minutes or until cheese is heated and peppers are soft.

Add whatever toppings you love!

Enjoy!

We really liked this meal! I can't think of anything that I would do differently. We served with Guacamole and sour cream but that is completely optional. It taste great without it too!!
