Sweet Pork and Playing Catch Up!

Oh my goodness! I have not posted anything for so long!! Shame shame!

Work has been crazy lately so I haven't had my normal slow time in the mornings to write and post. We are getting busy and will stay busy until the first of the year! I don't want to stop blogging though. I really have fun with it!! I am just going to have to come up with a better schedule that's all! 

But let me assure you I have been doing great! I will be updating my Workout Log today to show you all that I am keeping up with my schedule! And seeing progress! Yay me!!


There is no way I am going to make you all sit through a post about everything I have eaten and every workout that I have done in the past four days or so. That would bore you and me both!! But I do want to tell you about a new recipe that I concocted that I must say, I loved!!

I decided to call it Sweet Pork.



Oh my goodness, oh my goodness!!

Very tasty and healthy too!! (or it is according to my Fitness Philosophy, but please judge for yourself)

I am sorry that I never measure anything. But this is so easy I'm sure you won't need to measure. It's based on your taste!!

What you need:
Pork! - I used two 'assorted cuts'
Apple - I only used one cuz Nathan doesn't like cooked fruits.
Baby Carrots - a handful cut longways
Olive Oil - Just enough to cover the bottom of your pan
Molasses - Probably 2 T? I just drizzled it on till it tasted good!
Water - Just to thin the Molasses and make a sauce


Make it happen:

First, in a pre-heated and oiled pan, sear the pork on both sides (1-2 min on high). Then lower heat to med-low. Add apples, carrots, molasses, and water. Cover and cook, stirring occasionally, until meat is done and the apples and carrots are soft.
Serve over rice with steamed veggies.

  1. Because of work, August is definitely my busiest time of the year (60-80 hour weeks). Other than that, I like to think that the winter is my fun-busy time of the year :)

    1. I really like that winter is so busy!!. Cold weather makes it easy to be lazy! Working keeps that from happening. =)
